No-bake Lemon Protein Cheese Cake

This no-bake recipe for a lemon protein cheese cake is so simple, you'll find it hard to believe it would even taste good. AND on top of that, have the most awesome macros per serving.


For the filling

400 grams of yogurt (we used soy)
80 grams of lemon protein powder *
8-10 grams of gelatin
1/2 cup of warm water

* If you can't find lemon protein powder, you can also mix up a vanilla protein powder with a packet of lemon pudding mix. A bit of lemon juice does the trick too.
Otherwise, just use a different flavor altogether. The options are endless.

Blend the yogurt and protein powder together, using a hand mixer or blender.
Dissolve the gelatin in the warm (not hot!) water, and mix into the yogurt.
Line a plastic bowl (about 9 inch diameter) with plastic wrap.

For the base

30 grams of rolled oats
30 grams of oat flour (if you don't have oat flour, just grind up oats first)
40 grams of butter
1 tbsp xilytol (or other sweetener)
1 tbsp of lemon protein powder

Melt the butter, then add in the oats, protein powder and xylitol and mix into a crumbly consistency.
Line the bottom of the bowl with the oat mix, then pour the yogurt mix on top. Let this set in the fridge for at least 3 hours, preferably overnight.
